Ingredients
Main Ingredients
- 4 cups Beef broth
- 2 cups Water
- 3 medium Beets, peeled and grated
- 1 medium Carrot, peeled and grated
- 1 medium Onion, chopped
- 2 cups Cabbage, shredded
- 2 tbsp Tomato paste
- 2 tbsp Vinegar
- 1 tsp Sugar
- Salt and pepper to taste
- 1 cup Sour cream, for serving
- 2 tbsp Fresh dill, chopped, for garnish

Instructions
- In a large pot, bring the beef broth and water to a boil.
- Add the grated beets, carrot, and chopped onion. Simmer for 20 minutes.
- Add the shredded cabbage, tomato paste, vinegar, and sugar. Simmer for another 30 minutes.
- Season with salt and pepper to taste. Simmer for an additional 10 minutes.
- Serve hot with a dollop of sour cream and a sprinkle of fresh dill.
Notes
For a vegetarian version, use vegetable broth instead of beef broth.
