Some days I want to punch life in face, like square in the nose (and really hard).
Other days, I want to give it a high five. If it’s a particularly good day, one of those high fives where you take a running start and leap in the air until your hands meet. The kind you see in the movies where they do a screen freeze with both parties frozen in the air with their hands together.

Let’s talk about these crave-worthy peanut butter buckeyes, shall we? They’re my new obsession. I tried my first ever buckeye over the holidays and fell in love. I mean, peanut butter and chocolate—what’s not to love?
I can totally make a healthy version of these so I can have them every day and not feel the least bit remorseful. And, here they are.

Here’s how they’re made:
- Add ½ cup of old-fashioned oats to the bowl of a food processor. Pulse until the mixture resembles coarse sand.
- Add ½ cup almond meal and 2 tablespoons flaxseed meal. Pulse to combine.
- Add peanut butter and honey. Pulse until blended.
- Roll the mixture into ½-inch balls. Place on a parchment-lined baking sheet and freeze for 30 minutes.
- Melt chocolate over a double boiler or microwave in 30-second increments until smooth.
- Dip each ball halfway in chocolate and return to the baking sheet.
- Freeze again for about 15 minutes until the chocolate sets.

These little dreamy, peanut-buttery bites are made with wholesome ingredients and are naturally sweetened. You can make them gluten-free using certified gluten-free oats. For a vegan option, substitute maple syrup for honey.

Ingredients
- ½ cup old-fashioned oats
- ½ cup almond meal
- 2 tablespoons flaxseed meal
- 1 cup creamy peanut butter
- ¼ cup honey or maple syrup
- ½ cup dark chocolate chips
Directions
- Line a baking sheet with parchment or wax paper.
- Pulse oats in a food processor until coarse.
- Add almond meal and flaxseed meal; pulse to combine.
- Add peanut butter and honey; pulse until smooth.
- Form into ½-inch balls and freeze for 30 minutes.
- Melt chocolate until smooth.
- Dip bottoms of balls in chocolate and return to sheet.
- Freeze for about 15 minutes until chocolate hardens.
- Store in an airtight container in the refrigerator for up to 1 week.
